Nettle Cakes

In Foxes at our Bletchingdon setting we have been doing some unusual baking this week. On Monday morning, during Forest school, we collected nettles. We wore protective gloves, so we wouldn’t be stung, and snipped them off using scissors, with Sally’s help.

In the afternoon we cooked them, to get rid of their stings, and removed all the leaves from the stems. We then froze them until we were ready to use them in our baking.

On Thursday we used the leaves to make nettle cakes. We chopped the leaves finely and added them to a yummy, gluten free, cake mixture.

On Thursday, at tea time, they were ready to eat. We have really enjoyed making our nettle cakes.
